AOP Cotes du Roussillon red A full-bodied but supple red wine with a wild character Grape varieties Mourvedre (80%), Syrah (15%), Grenache (5%) Terroir Pebbly clay-limestone, 150-200m above sea level in the middle of the Aspres cru. Vines 21-55 years old. Production 18 hl/ha / 3500 bottles Viticulture / Winemaking Sustainable viticulture. Harvest and manual drawing. Traditional fermentation for three weeks at 26°C with native yeasts. Native malolactic fermentation. No fining or additives. Mourvedre aged for 12 months in barrels, 20% new, American oak. Syrah and Grenache aged in stainless steel. Filtration during bottling. Minimum sulfur dosage – 30 mg/L total. Ecova 75cl bottles, DIAM 5 cap.
