According to Brazilian tradition, the handcrafted cachaças are distilled in copper stills.
In addition, the foreshots and tails of the distillation are removed. Only the heart of the distillation is kept.
Afterwards, some cachaças are aged in a stainless steel barrel for at least 6 months, a process that helps oxidize the acetaldehydes and improves the purity and quality of the final product.
Cachaça can be stored in more than 30 different Brazilian wooden barrels, making it probably the most versatile distillate in the world.
