The dried meat that we offer is made 100% from the meat of bison from our farm. Our animals live in semi-freedom and in the open air, they are fed with cereals from our culture, grass and hay. This is what gives dried bison meat a succulent flavor. Mountain salting promotes quality drying thanks to the altitude combined with the cool and dry climate of Bourbonnais, while protecting food from spoilage. We do not use any coloring or preservatives. Bison meat is naturally rich in protein and much less fatty than other red meats, so it is an excellent alternative to the latter.
