Purple maize is a variety of maize native to the Andes. It gets its particular color from its great richness in anthocyanins, a purple pigment found for example in blueberries, aronia, blackcurrant, and whose dietary interest is unanimously recognized! This corn is used by local populations to make drinks, bread, tortillas, sorbets and various desserts (including Mazamorra Morada).
