Organic forest honeydew honey

Forest honeydew is a very particular honey, with a caramelized flavor and a dark amber colour. It stands out from all other honeys as it does not derive from flower nectar but from honeydew.    Honeydew is produced by some insects that feed on the sap of plants (Lime, Oak, Chestnut etc.)from which they get their nutrients.       The main characteristic of this honey comes from the high content of enzymes and mineral salts. For this reason it is one of the favorite honeys for those who practice sports. It rightly has the reputation of being a healthy product thanks to the countless substances it contains, some present in infinitesimal quantities, capable of reacting positively in our body.       The color is dark and appears in a liquid state. Both the scent and the flavor are very characteristic and particular, different from nectar honeys so much so that forest honeydew is very often appreciated even by those who are not honey lovers. Bees use honeydew in large quantities, producing a honey very rich in mineral salts, with a tonic and less cloying flavor than common honeys having a lower sweetening power.    It is recommended to use it with coffee, thanks to its lower sweetening power, it allows you to fully enjoy the flavor while reducing the bitter taste; it also pairs well with mature cheeses and on a slice of toasted bread.
