The future of Burgundy... The Hautes-Côtes de Nuits are the cradle of the Delaunay family, based in Etang-Vergy since 1954. Located on soils similar to those of the great wines of the Côte, a few kilometers to the west of their illustrious neighbours, they offer exceptional terroirs to discover. Their altitude, 100 to 150 meters higher, may be a response to climate change by offering fresh, pure and elegant wines. Faithful to our history, we wish to contribute to revealing these lands of the future which come to enrich our beautiful Bourgogne des climats, as the monks of Cîteaux did in the Middle Ages. Les Rouards are a first expression of a selection of the best plots of the Hautes-Côtes. The quality of its terroir could lead it to become, in the coming years, a future premier or grand cru of the region. Our cuvée comes from a blend of two great terroirs with white grape varieties from the Hautes-Côtes de Nuits, located in the towns of Villars-Fontaine and Marey-lès-Fussey. The south-west orientation, reminiscent of the grand crus of Chablis or Corton-Charlemagne, gives a beautiful maturity to the fruit, and the altitude brings freshness and minerality. The wines are gently pressed before fermentation begins in stainless steel vats before barreling, and slow vinification in barrels, 21% of which are new barrels. Aging on fine lees that follows lasts 8 months, accompanied by regular concreting. Nice pale yellow color. Very expressive, complex and elegant nose with subtle floral notes (pollen), scents of pastry (meringue, calissons d'Aix, candied melon, bergamot, etc.) to which are added nuances of fresh hazelnut and candied chestnut brought by the delicate aging in barrels. The mouth is round with a nice freshness at the same time as a certain sweetness. We end with fine and subtle aromas of lemon pie.
