OZPEAN - Underwater wine vinegar

OZPEAN was born from the meeting of the coastal Basque Country and the interior. 
D’EGIATEGIA in Ciboure and Jean-Philippe Lanougère, one of the 6 master vinegar makers in France based in Mauléon-Licharre. 
Two men, two backgrounds, who came together to produce the first wine vinegar made from underwater lees.
 Once the underwater wines are bottled, a small quantity remains at the bottom of each tank: the dregs. 
The latter, resulting from the second alcoholic fermentation, has a strong aromatic potential.
 It is by conserving this dregs in old barrels, and in the spirit that has always driven us to maximize the value of our derived products, that the idea of ​​creating the first underwater wine vinegar was born.
