Sicilian Manna in Cannoli - Gelardi

Once thousands, today there are approximately 250 hectares of ash groves in the towns of Pollina and Castelbuono. During the summer, ash growers cut the bark of the trunks to let out a blue, resinous substance which, when exposed to the scorching sun, congeals, forming whitish stalactites of manna. The harvest takes place with the mannaruòlu (for engraving), the rasula (for scraping the manna that remains in the furrows of the bark) and a large prickly pear leaf (which collects the part that has fallen to the ground). Only that which slides like a stalactite and does not come into contact with the bark is pure manna. Format: 40 g
