The cockles come from Atlantic fishing grounds. Upon receipt of the cockles at the factory, they are steamed and shucked. The food is washed very carefully in lukewarm semi-salted water to then select the pieces by size. The flavor is intense and the texture is consistent, firm and juicy. Ideal for your Vermouth moment! Try them with the Espinaler Sauce!
