The olives are hand-picked prior to milling and the oil is strictly obtained by cold-pressing methods. This extra virgin olive oil was bottled at 0.3% acidity. We highly recommend using this olive oil strictly as a finishing oil. Heat can damage the complex aromas and flavors in the oil.
