In addition to being rich in vitamins and minerals, chickpeas contain fiber and antioxidants. Chickpeas are used in many Mediterranean recipes, but also Tunisian, Moroccan and Algerian. They can be cold, in salads, or even roasted, sautéed, slowly cooked in broth or mixed (like hummus) and even cooked sweet!
