Pepper Leather

Pepper leather is made from the long pepper (piper longum). Long pepper is harvested at its last degree of maturity, when its grains are red and so ripe that they are completely soft. The long wall pepper is then crushed and spread on stainless steel trays to be dried. The aromatic power of this pepper is simply remarkable. We recognize the aromas of long pepper with notes of gingerbread, cinnamon, date, chocolate and fig, but the leather of pepper is much more intense and more complex on the nose. This derivative of long pepper is a unique, very refined product, perfect for pepper lovers.
