
Double juniper is a gin in which only a single botanical is used with juniper. However, it is precisely this simplicity that makes its production so complicated. The quality depends solely on the juniper berries used and their careful processing. Gerhard Liebl, Germany's most successful distiller in international competitions, does not use dried juniper berries for his DOPPELWACHOLDER 052, as is common practice, but fresh berries from Tuscany. As a result, the tart and resinous notes of juniper do not dominate, but fresh citrus notes, fine sweetness and subtle floral aromas.
