Wissant shortbread

Sablé de Wissant is a soft cheese but not without character, a bit like Blanche de Wissant, a local beer from the Côte d'Opale with which it is manually brushed. Note that the Sablé de Wissant (under another name) was voted “the most odoriferous cheese in the world” in 2004 by Doctor Stephen White & his team, at the University of Cranfield in Bedfordshire in the United Kingdom. One of the finest consecrations for a cheese!
