GABAITI is the first official structure to promote wild game hunted in the South West.
GABAITI is the origin of the word game. In the Middle Ages, GABAITI was falcon hunting.
As a hunter and player in the rural world, I wanted to promote game meat, which until then was reserved for hunters and those around them.
Wild game meat is the most sustainable, with zero impact on the environment, as the animals are raised on their own without human intervention. But it is also a meat which presents a major interest, its dietary qualities: low fat content, rich in proteins and mineral elements (calcium, phosphorus, potassium, iron...).
As for the taste qualities, they deserve to be discovered by a wide audience.
And that’s where GABAITI comes in.
Game does not fit into traditional circuits, being raised alone in the wild before being slaughtered it is difficult to market. My role is to overcome this difficulty by sourcing from hunting associations and hunting societies, by transporting the game to an approved processing centre, by having it cut up and processed in order to be able to offer original products that will delight your taste buds.
I prepare this game from the fresh piece to the charcuterie or salting.
This circuit is regulated at many levels and GABAITI is committed to respecting the hygiene standards in force in order to offer you wild game in complete safety.
Through the plate, I want to convey my image of hunting, a hunt that respects the environment and is rich in timeless history, a place of fraternity, exchanges and respect.
