GABAITI is the first official structure to promote wild game hunted in the South West.
GABAITI is the origin of the word game. In the middle ages, GABAITI was falcon hunting.
As a hunter and actor in the rural world, I wanted to promote game meat which had until then been reserved for hunters and their entourage.
Wild game meat is the most sustainable there is, its impact on the environment is zero, the animals raising themselves without human intervention. But it is also a meat which is of major interest, its dietary qualities: low fat content, rich in proteins and mineral elements (calcium, phosphorus, potassium, iron...).
As for the taste qualities, they benefit from being discovered by a wide audience.
And that's where GABAITI comes in.
Game does not fit into traditional circuits, growing alone in the wild before being slaughtered, it is difficult to market. My role is to overcome this difficulty by supplying myself to associations of hunters and hunting companies, by transporting the game to an approved processing center, by having it cut up, transformed in order to be able to offer original products that will delight your taste buds.
I have this game prepared from the fresh room to the charcuterie or salting.
This circuit is regulated at many levels and GABAITI is committed to respecting the hygiene standards in force in order to offer you wild game in complete safety.
Through the plate, I want to convey my image of hunting, a hunt that respects the environment and is rich in an ageless history, a place of fraternity, exchanges and respect.
