We go up the peninsula to western Liguria to discover another olive cultivar, this time small and black but with a very intense flavour, the Taggiasca olive.   Ours are the real TAGGIASCA and not the Riviera as too often happens...    Product used for the preparation of pizzas, focaccias, appetizers, first and second courses.   It can be used both raw and cooked.
