The Kalamata olive is a purple olive with a smooth, fleshy texture named after the town of Kalamata in the southern Peloponnese, Greece. Highly appreciated for its fleshy and juicy pulp, and its rich, fruity and full-bodied flavor, this olive is among the most prized in the world; it is used in many Mediterranean recipes: salads, tabbouleh, raw vegetables or carpaccios, pizzas, pastas, risottos; they go particularly well with tomatoes, Feta, and spinach. Rich in oleic acid, antioxidants (polyphenols and vitamin E), fiber, they are also a source of minerals (calcium, magnesium, iron) and vitamins (B6).
