Amfissa black olives ripen as long as possible on the olive tree. They are then collected by hand and prepared in brine, then dried in the oven to remove moisture. They are fleshy and we find the taste of real black olives. Neither pasteurization nor any other chemical treatment is imposed on the olives, so that they retain all of their flavor.
