The "Chemlali" variety olives are picked in the middle of the season (December) at the end of their color change. This allows for the famous ripe fruitiness. Characterized by a smoothness on the palate and olfactory sensations reminiscent of almonds, dried fruits and avocado. On average, 5 to 6 kg of olives are needed to obtain 1 liter of ripe fruity olive oil.
