Fregula, available in various sizes, was produced by "rolling" the semolina dough into a large earthenware basin and toasted in the oven. It comes in the form of irregular balls of variable diameter between 2 and 6 mm. The perfect cooking is the creaming with fish sauces or other full-bodied sauces. In Sardinia, one of the typical dishes is the Toasted Fregula Grossa with clams and clams.
