Trofie or trofiette are a type of pasta typical of Ligurian cuisine, with an elongated and thin shape, believed to originate from Sori, in the province of Genoa. ANDit should be noted that in the Ligurian language the term trofie indicates "gnocchi" and trofietta indicates a "gnocchi". The truffiette of Carloforte are also typical of the Sulcis archipelago in Sardinia (Genoese gastronomic tradition of the Tabarchina cuisine).
