Diamante Rojo ham cured in the Guijuelo area from native Iberian pigs raised in freedom and fed on acorns and herbs from the fields in the pastures of south-west Spain during the montanera period, labelled outside the Iberian norm and cured in the drying rooms and wineries of Guijuelo, at its optimal curing point, in pieces weighing between 7.5 and 9.5 kilos.
