Diamante Rojo acorn-fed shoulder ham cured in the Guijuelo area from native Iberian pigs raised in freedom and fed with acorns and herbs from the fields in the pastures of south-west Spain during the montanera period, at their optimal curing point, in pieces weighing between 4.5 and 6.5 kilos and labelled outside the Iberian standard.
