The groundnut is a legume whose fruit has the particularity of developing underground. After a light toasting over a wood fire, the peanuts are ground with a millstone. This drying allows for better digestibility. Directions for use: It can be used in confectionery, with the addition of honey, maple syrup or agave. Mixed with a little water, it enhances the taste of vinaigrettes, or enhances vegetable dishes. Recipe idea: Sauce for raw vegetables Mix 2 tablespoons of groundnut puree with 2 tablespoons of vinegar or lemon juice, 1 tablespoon of soy sauce (Tamari), 2 of water and fresh herbs. This sauce can be used with all kinds of raw vegetables.
