Our eggplant mézé is prepared and cooked by our producer in the Domokos region. Eggplants are hand picked when fully ripe. They are then roasted over an open fire, then peeled, to keep only the tender and juicy flesh. The pulp is marinated in olive oil and tea smoky, which reveals real aromatic power on the palate. It goes perfectly with our breadsticks, in fresh pasta or as a condiment on a salad.
