Greek twisted tomato sauce (with our Kalamata olives) For decades, the Domokos plateau has been renowned for the cultivation of traditional varieties of tomatoes, intended for processing. We chose the Ilida variety, a relatively small variety with a strong tomato flavor, medium acidity and high in natural sugars. For this recipe, the tomato is simply grated. An artisanal manufacturing process that gives it a very interesting chew. The producer then adds our delicious Kalamata olives and a hint of thyme to spice up the preparation.
