
- Aroma Profile: Peach, Chocolate - Specialty Coffee / SCAA Score 84/100 - Roasted in Brittany / Medium Roast - Country of Origin: Colombia / Process: Washed - Certified Organic Agriculture & SPP Certified (symbol of small producers) This coffee is produced by the Cosurca cooperative, located in the southern Cauca Valley, in the south of the country. Founded in 1993, it is made up of 11 organizations spread across several villages, representing a total of around 1,400 families of small peasant producers, the majority of whom come from indigenous communities and Afro-Caribbean descendants. The aim of the cooperative is to promote the integration and recognition of the identity of farmers in a difficult social context, through various projects: diversification of food and commercial crops (cane sugar, cocoa, peanuts, fruits and vegetables), training in good agricultural and ecological practices, cooperativism and fair trade, relevant education, improvement of organization within households, etc. Thus making it possible to fight against illicit crops and bring social peace. The aim of the cooperative is also to increase the productivity of the plots while maintaining optimum quality, thanks to various cultivation techniques, such as the application of specific organic fertilizers depending on the condition of the soil, for greater efficiency and thus obtaining gourmet and authentic specialty coffees. The manual harvesting of ripe fruit, the altitude of between 1,300 m and 1,700 m, the agroforestry cultivation system, the humid subtropical climate and the Arabica varieties such as Catuaï, Bourbon, Caturra and Gran Colombia, also contribute to the production of an exceptional grand cru coffee.
