Master chef for 15 years, ranging from A.O.C Pays d'Auge to Breton cider via organic ciders, I only remember one thing: great ciders and perries exist, all you have to do is keep only the best and to work sparingly. Coming from a long line of Celts, we had to honor our ancestors and perpetuate with Kystin their values of pugnacity, rigor and altruism. Respectful of our family motto "Fide and Fortitudine", already used by our ancestor Sir William Cromar Sr (1385-1433), Earl of Cromar near Braemar in Aberdeenshire, we apply ourselves, with lengths of effort, care and knowledge - to achieve the level of requirement required by the Kystin cuvées, ciders of Tradition, Innovation and Exception!
