This blue is a cow's milk cheese, produced on the farm with milk from a single herd and from organic farming, a rarity! It has a format close to that of a Tomme. Its amber-colored rind is the result of careful rubbing and refining, to give way to its full maturity. It has a marbled and soft paste, there are buttery notes in its paste dotted with veins of blue with a unique texture and taste.
