This large cheese is a farmhouse cheese made from raw, whole cow's milk, with a soft paste and a bloomy rind depending on the ripening. it has a yellowish, smooth paste and its supple, melting and unctuous texture. Chalky at heart, the cheese develops a beautiful creamy layer around its periphery. It is also found more or less refined. Refining allows it to develop a nutty and spicy taste. Its dough is then covered with a thin cream-colored film.
