Ricotta salata is a dairy product, not a cheese, made from cow, goat or sheep's milk whey. 

It is a semi-hard milk derivative subjected to short maturation but lasting no less than 7 days. 

Excellent on pasta especially if the sauce is nduja style. 

It makes every dish tastier by caressing the palate with its creaminess.
