Our fermented black pepper is grown in India, in the province of Wayanad, state of Kerala. It is picked just before maturity, it is dried and preserved in salt. It is then sterilized so that it can be kept out of the brine. It is moist and may become covered with a crust of salt on its surface as it dries. Its flavors are close to fresh pepper. It has a soft and firm texture with a fresh and fruity taste. It can be used to prepare pepper sauces, especially cream-based sauces. It goes well with stews. It flavors red meats, game and seafood, especially white fish.
