Apricot jam from Roussillon

The apricot is rich in vitamins B1, B2 and C as well as in mineral salts (in particular phosphorus and magnesium). It is also an excellent source of fibre. It is a light fruit with a low caloric intake (47 Kcal/100g). Total sugar content (added sugar + fruit sugar) about 55g per 100g. Shelf life 3 years after the date of manufacture, as long as the jar is not opened. Store preferably in a cool place after opening.
