Traditionally from Vendée, these rillettes are made from fresh sardines and churned butter. Seasoned with shallot, parsley and lemon juice, this recipe reveals a traditional character and a taste much appreciated by gourmets. Fibrous and melting, rillettes are easy to spread. Kept in a metal box, this spread does not undergo photo-oxidation and retains all its flavors. The Perle des Dieux sardine rillettes won the Gold Medal at the departmental competition for local Vendée products.
