Vintage Sardines 2020 COSSAIS "The reunion of Miss Perle and her sailor"

Fished off the coast of Saint-Gilles-Croix-de-Vie in Vendée, the vintage sardines are selected for their rich fat content of over 12%. A tradition maintained since 2004 where the sardines are prepared and nested by hand within hours of fishing. This recipe is above all a sardine for keeping that must be allowed to age by turning it every six months to allow it to confine and enhance its gourmet notes. The 2020 vintage marks Mademoiselle Perle's reunion with her sailor, illustrated by painter Delphine Cossais.
