Jam - Marianne strawberries, kalamansi juice - 200g

This artisanal preparation, traditionally cooked in a copper cauldron, highlights fresh strawberries, picked when fully ripe, and kalamansi, a small citrus fruit whose delicate scent evokes mandarin. A jam made exclusively for Tour d'Argent, with very little sugar. Maison Perrotte Stéphan Perrotte is a passionate artisan jam maker, constantly searching for new recipes. Mastering traditional know-how and cooking science, he selects little-known or rare fruits, spices and aromatic plants, in order to revive their authentic flavors. He is the only jam maker in France to have won the Best Jam Maker in France Competition (2014) and the World Jam Championship (2015).
