Mountain trout in olive oil-70

La Truitelle ecological preserves contain, depending on their size, two to four small whole rainbow trout, canned by hand. Their artisanal breeding, in the crystalline waters of springs and mountain torrents, gives them a texture very similar to those of wild fish. A steam precooking followed by a perfectly controlled appertisation in extra virgin olive oil, reveals, in all simplicity, their subtle and refined taste!
