La Vaugermaine is a micro-brewery producing traditional beers (blondes, triples, etc.) and grape must beers.
His favorite beer, the soul of the brewery, is beer made from grape must harvested from the vineyards of the Chablis appellation, a famous white wine from the north of the Burgundy appellation, made from 100% Chardonnay grapes.
The must beers develop the organoleptic characteristics of both worlds, giving each beer a ""varietal"" and ""terroir"" dimension that makes it unique and singular. They also have a certain ability to age, with evolutions of flavors comparable to those of wine. As such, they carry the vintage of the year of harvest of the must which goes into their manufacture. Karine and Odile have both worked in the world of wine.
Odile was cellar master in a large wine estate, and Karine was the housekeeper.
