Cod brandade

A specialty of Nîmes par excellence, cod brandade can be eaten hot or cold. A delight simply spread on a toast or to cook according to your desires. Plain, the brandade is eaten on croutons of bread rubbed with garlic. Cooked, it adapts in many ways: in pizza, in puff pastry, with mashed potatoes or vegetables.
