Eggplant caviar

Great finesse, both in taste and texture. You can also change the dip style of eggplant caviar and use it as an accompaniment to grilled meats, a well-seasoned leg of lamb, on fresh pasta or an eggplant flan, or even slip it in pastry sheets for samosas that change, or between two slices of sandwich bread with bacon, ham, or even radishes, for easy bites.
