The preserved Tuna Albacore loin from the Armoire à Conserves is made from fresh fish from the Saint Jean de Luz fish auction, our team of cooks salts and fries the fish which will be preserved in oil. It is during the summer and early autumn that albacore tuna or white tuna comes back to our coasts to feed. It is part of the fishing traditions of the Basque Country. Freshly landed at the port of Saint Jean de Luz, we select the best batches in order to make the best artisanal preserves. You will have understood that there is no frozen food with us!!! We are keen to have a quality product so that our canned tuna is as authentic and tasty as possible. Albacore tuna: The preferred species! The reserves are correct (so we eat in moderation, without overdoing it!),the fishing is local… The albacore tuna is good! And it is this species that is commonly used by canneries concerned with responsible and ethical fishing. Preparation advice: Our tuna loin can be enjoyed as is, on buttered toast with a lemon zest. It can also enhance a salad. Short on time ? Always have a can of tuna belly in oil in your cupboard! A salad, a few tomatoes from the garden, a good can of tuna loin from the Armoire à Conserves and that’s it. You can also completely transform it by making tuna bread with candied tomatoes or tuna bricks with ricotta. It’s according to your tastes and ideas.
