By harvesting fleur de sel by hand at the end of the day on hot summer days, we perpetuate an ancestral tradition. The fleur de sel vent d’Est® is harvested by the east wind at the end of the day on our saltworks. Fruit of an ephemeral crystallization, formed by hot and dry winds coming from the interior of the lands, its grain and fine and delicate. The fleur de sel vent d’Ouest® is harvested by westerly winds. Result of an ephemeral crystallization, formed by Oceanic winds, loaded with spray, it offers a more pronounced grain size, more crunchy grains.
