In Fécamp, salting and smoking have existed since the 14th century.
 At the beginning of the 1930s, SEPOA, a family business, specialized in the processing of cod.
 Over the years, members of the Lagarde family salted and smoked herring and mackerel in their boucane de Fécamp. At the turn of the 1950s, out of ambition, they equipped their own vessel to fish along the Normandy coast and at the same time created a direct sales store called Le Bouquet Normand.
