Le Petit Jus was born on the banks of the Thames, in London, between 2012 and 2015. Dorothée Saint-Hilaire is a research engineer in a large cosmetics company. It was behind the counters of coffee shops on the London scene that she discovered the culture of specialty coffee and came up with the idea of contributing to its promotion in France. Coffee is not that bitter sip that you swallow quickly at the end of a meal or between two meetings in the corner of a bar. It is a complex drink, which has its own history. Coffee is a noble product and good coffee is a result that owes nothing to chance: from the producer to the consumer via the roaster, everyone has a role to play so that coffee becomes a unique experience of tasting.
It took five years for the project to mature and finally come to fruition. Dorothée is trained by Mikaël Portannier, Meilleur Ouvrier de France, and obtains her SCA certification in 2021. She set up her roasting workshop in Brittany with the idea of bringing her two worlds together: the development of quality products and her taste for good coffee.
