These are pestos of fresh plants perfect for pasta, to spread simply on toast, in the bottom of a pie, a sauce. They slip easily into most dishes, it's a great creative ally. I transform the plants that I grow immediately after harvest, so that they deliver all their taste power. I have been growing basil and savory on a domain maintained in organic farming for 25 years. I also pick wild garlic, a plant that occurs naturally in the undergrowth. I only use quality products: virgin oils, almond or cashew nut puree, lemon juice, salt and garlic come primarily from local producers with the same artisanal philosophy of quality and respect for life.
