There are four tea harvests, lasting from mid-April to the end of September.

It is prepared with leaves from the fourth, from the summer and autumn harvests.

It is obtained by covering the tea plants with straw tarpaulins two or three weeks before the first picking. 

By “shading” the plants in this way, the chlorophyll content of the leaves is increased, giving the drink a typical and very sweet seaweed flavor. hojicha is a bancha whose leaves are grilled at 180°. kukicha is a green tea made from twigs (), the least rich in theine of traditional teas. matcha is green tea ground into a very fine powder. 

It is mainly produced in Japan, in the Aichi region. 

Unlike other teas, matcha does not steep but must be whisked in hot water with a bamboo whisk (the ) to create an emulsion.
