Our fresh wild fennel and dried tomato pesto is obtained from wild fennel and dried tomatoes, also known as “rizzo” fennel. Foeniculum vulgare Miller is the scientific name. It is an aromatic plant belonging to the umbelliferae family and is native to the Mediterranean regions. In our parts, in Eastern Sicily, it is a very widespread plant in the coastal areas and its aromatic properties are well known, especially for its use in cooking. It is used as a condiment for fatty meats, see the typical Ragusa pork sausage, seasoned with fennel seeds, as a condiment in pasta with sardines, to prepare liqueur and is always used in soups with legumes.
