Grape variety: Grenache 45% and Syrah 45% and Carignan 10% Terroir: Municipalities of Caromb. Old plots located on hillsides where these grape varieties express themselves at very low yields on limestone soils. Vinification: Total destemming. Putting in concrete tank. Long maceration to extract the robust tannins offered by this selection of old vines. Pressing and assembly. Aging in vats for 1 year on fine lees in order to harmonize this complex wine. Tasting note: Dark red color with purple reflections. Nose with spicy and liquorice notes Palate revealing a complex bouquet of black fruits and spices. Pairings: side of beef, game, spicy dishes. Aging: 10 years An elegant and aromatic wine, made from a rich and sunny terroir.
