Kalamansi Jam

My kalamansi jam is made from the fruits of our plantation. For the record, kalamansi is a small exotic fruit originating from Asia. Its pulp is juicy and as tangy as lime with a taste close to passion fruit. Its zest is sweeter and reminiscent of kumquat and pink grapefruit. It starts out green and turns orange as it ripens on the tree. Once candied, the kalamansi softens and offers rounder, orange notes of mandarin and clementine. This marmalade will surprise you with its sweetness and unique freshness. It will go perfectly with a cheese platter, such as fresh sheep's or goat's cheese, or a faisselle. It also goes very well with white meats or can be enjoyed simply for breakfast on a slice of fresh bread, brioche or fromage blanc.
