
My yuzu marmalade is made from fruit from my plantation in the Var. For the record, yuzu is a citrus fruit native to Japan. Visually, it resembles a small grapefruit and its skin is thick and bumpy. It is a citrus fruit that changes a lot, it will be green at the beginning of the season and will end up yellow-orange. It is a precious and unique citrus fruit that offers a multitude of aromas and flavors. In fact, the fruit can remain ripe on the tree, its zest will evolve each time towards different flavors. Notes of lime, grapefruit, mandarin with acidity and freshness. Pieces of candied yuzu peel for pleasure. To be eaten in small touches… With whatever inspires you! Yuzu goes wonderfully with chocolate ganache, as well as fresh goat or sheep cheese.
